The Louisiana State University research team has stated that intestinal bacteria such as Bifidobacterium will ferment and decompose chocolate in the stomach and release polyphenols that are beneficial to the heart. Dr John Finley and his team also found that dark chocolate contains this compound - cocoa flavanols.

Recently, American scientists conducted a study to find out whether cocoa flavanols in dark chocolate are beneficial to the heart. Scientists worked with chocolate manufacturer Mars to extract high concentrations of cocoa flavanols from cocoa powder to make capsules and recruited 18,000 participants for experiments. Participants will take capsules daily for four years but will not be informed whether they contain cocoa flavanols.
Christopher Allen of the British Heart Foundation says: “Although cocoa nigrosin has been found in dark chocolate, it is often destroyed during processing.” So the chocolate sold on the market does not benefit the heart. In addition, chocolate also contains sugar and fat, and eating too much can lead to obesity and diabetes.
